Kitchen ventilation cleaning using the Steiger® process
The cooking process in commercial kitchens generates significant quantities of airborne grease, carbon and steam, which are extracted by the cooker hood and passed through the ventilation ductwork to the outside of the building.
Unfortunately, a great deal of the fat and carbon condenses on the inner walls of the ducting, where it forms a sticky film of ever-increasing depth. If not removed, this film reduces airflow, creates foul odours and presents a significant fire hazard. If something catches fire on the cooking hob, flames can be sucked into the extraction system and spread rapidly along the greasy ductwork, potentially setting fire to parts of the building far removed from the kitchen. Regular cleaning is strongly recommended both as a duty of care and by insurance companies, who usually charge higher premiums where ventilation ductwork maintenance is poor.

The Steiger® process starts with a thorough inspection of your ventilation system, to check its condition and identify the location of fans and fire suppression systems. After protecting kitchen equipment and sealing ductwork joints, specialist equipment and a unique cleaning product are used to leave the system cleaner and safer. It is kept this way by regular follow up cleans, spaced according to the speed of grease accumulation and your requirements.
Many areas that are normally out of reach – such as vertical sections of ductwork – can be cleaned using the Steiger® process, ensuring that your whole ventilation system is maintained to the highest standard.

Risk Assessment

The Law regarding Fire Safety
In 2006, the new Regulatory Reform (Fire Safety) Order 2005 and the Fire Act (Scotland) 2005 came into operation. All commercial kitchens have to comply. Failure may result in an Environmental Health Officer closing you down and your insurance policy not paying out any claim caused by fire in your ventilation system.
